Method

Mix the spicy dough
Cream butter and brown sugar until fluffy. Mix in molasses, egg yolk, and vanilla. In another bowl, whisk flour, cinnamon, ginger, baking soda, salt, and cloves. Add the dry ingredients gradually, then mix in the milk until a soft dough forms.

Chill the sleepy disks
Form the dough into a ball, divide in half, and flatten each half into a 1-inch-thick disk. Wrap and chill at least 2 hours (overnight is lovely).

Roll and cut shapes
Heat the oven to 350°F and line two baking sheets with parchment. Roll dough on a lightly floured surface to about ¼-inch thick. Cut shapes, transfer to sheets, and re-roll scraps as needed.

Bake until just set
Bake one sheet at a time for 7 to 9 minutes, until edges are just set but centers still look soft. Cool on the sheet 5 minutes, then move to a rack.
